Best Meatloaf Recipe Ever

As my first recipe post, I didn’t have to think twice about which recipe I wanted to feature.  This recipe is amazing and I wish I could take the credit for it but you will have to thank Sarah at Everyday Paleo for that. ..see the original recipe here

I won over my boyfriend’s heart and stomach with this meatloaf…it’s that good.  The only downside is that we usually polish off this meatloaf in 2 sittings tops…so be warned!!










1 diced red onion

2 lbs of grass fed ground beef

1 cup almond meal

2 eggs

1 can tomato paste*

1 tbsp crushed garlic

1/2 tbsp sea salt

2 tbsp dried basil**

1 tsp marjoram

cracked black pepper to taste

Mix all ingredients by hand in a large mixing bowl. Place meat mixture into a large glass baking pan and form into a loaf.  Bake at 350 degrees for 1 hour or until meat is no longer pink in the middle.

* I use two cans of tomato paste.  I save one can to spread over the top of the meatloaf during the last 10-15 minutes of cooking.

** I use about a 1/2 cup fresh, chopped basil

Tips: you can also add additional vegetables…some chopped mushrooms, bell peppers…you pretty much can’t go wrong.
